GLUTEN-FREE PEANUT BUTTER CUP BROWNIES

Ingredients:
1 cup creamy peanut butter
1/2 cup unsalted butter or coconut oil, melted
1/2 cup brown sugar, packed
1/4 cup granulated sugar
Two eggs
One teaspoon pure vanilla extract
1/2 cup gluten-free all-purpose flour blend
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon kosher salt
1 cup semisweet chocolate chips

Instructions:
Preheat oven to 350F. Line an 8×8 baking dish with aluminum foil, set aside.
In a medium bowl, whisk together peanut butter, butter or coconut oil, brown sugar and granulated sugar until well combined. Add eggs, one at a time, whisking until smooth. Stir in vanilla extract.

In a small bowl, whisk together gluten-free flour blend, baking soda, baking powder and salt. Add to wet ingredients and mix well. Stir in chocolate chips. Pour batter into prepared pan, spread evenly. Bake until brownies are set, and a toothpick or cake tester comes out clean when inserted into the center, about 25 minutes. Let cool completely in the pan before cutting into squares.
