GLUTEN-FREE RICE PUDDING

Ingredients:
1 cup white basmati rice
2 cups water
1/2 teaspoon kosher salt
4 cups almond milk, divided
1/2 cup honey, divided
One vanilla bean split lengthwise

Instructions:
In a medium saucepan, bring rice, water and salt to a boil over high heat. Reduce heat to low and simmer, stirring, until all the water is absorbed and rice is tender for about 10 minutes.

In a big saucepan, combine almond milk, honey and vanilla bean seeds. Cook over medium heat, occasionally stirring, until mixture comes to a simmer and thickens about 20 minutes.
Add cooked rice and stir. Serve warm or chilled.
